Costas Spiliadis had a simple idea: share the beauty and diversity of Greek food with the world. In 1979, he opened the first Milos in Montreal, an experience that put authentic Greek hospitality, simple preparations and pristine seafood front and centre. With its latest outpost in Singapore, Milos continues to champion this philosophy, but on a grander scale.
The experience begins with a guided stroll past the restaurant’s showpiece: an open seafood market brimming with fish, shellfish, and crustaceans, all flown in fresh from the Aegean and ready to be prepared in your preferred cooking style. The spectacle continues with a lineup of Milos’ signature dishes including Milos Special, a tower of crispy zucchini and eggplant, Tomato Salad, Whole Fish Baked in Sea Salt, Lobster Pasta Athenian-Style, and Mediterranean Octopus that’s chargrilled to perfection.
Pair it all with a glass from the extensive Greek wine list — Singapore’s largest and featuring intriguing grape varieties from the volcanic terroir of Santorini to the mountainous slopes of the Peloponnese.
With its Greek artefacts and serene palette of muted marbles and woods, Milos is an eloquent introduction to Spiliadis’s beloved home, where the flavours are bold, the hospitality endless, and the seafood never less than spectacular.
