How Japanese Wagyu Beef is Graded

Japanese Wagyu beef is subject to stringent assessment by the Japanese Meat Grading Association and is graded according to the yield grade and the meat quality grade.

The yield grade measures the ratio of the meat weight to the total carcass weight, while the meat quality grade is assessed based on its fat marbling, texture, and the colour and brightness of both the meat and fat. The yield grade is indicated by a letter, with “A” representing the highest yield of quality meat from the carcass, while the quality grade gives the Wagyu beef a grade from 1 to 5, with 1 being the highest. An A5 grade indicates that the Wagyu beef has the highest yield and top quality in terms if marbling, texture and colour.
